How does flavor mapping work?

Flavor mapping seems to have changed since Angband 2.9.3. Back then there have been blocks of 16 entries for each of the flavored item sorts (potions, scrolls, wands, staves ...)

Now I tried to make a flavor mapping for my Iso-UnAngband project, and I see that newer Angband versions have a list of several hundred "L:n:att:chr" entries as flavor mapping. But how do I know which of these are rings, potions, amulets ... or all the the other sorts of flavored things?

Also, there had been mappings for spell effects. Are those in there now, too, and if yes, where are they?

You need to check against flavor.txt in lib\edit. That'll give you the corresponding tval and possibly sval for the flavor. Tvals are in defines.h.

The graf-xxx.prf files have the definitions.
